May someone explain to me the benefits of applying to any of each over the others besides later deadlines? For example, would applying to ED 1 yield a higher chance of being accepted over ED 2 or EA?

I would search on prior posts on this topic. You should only apply ED1 if you have a single school for which you know that you want to attend there more than any other school, and for which you can afford to go to this school without comparison shopping financial aid packages among other schools. There is no straight answer as to benefits. My husband analyzed ED and RD acceptance rates at lots of schools last year and there was no consistent answer. You have to remove out the estimated D1 athletes and then calculate.

So there is virtually no varying acceptance rates between applying EA, ED I, and ED II?

Few schools offer both EA and ED, so it’s difficult to say. Some like Tulane and Case Western (this is the first year) for Case) now do so, but I don’t know if there’s any data comparing admit rates for the two.

For ED 1 and 2, you’ll often see ED1 being higher, but that is often because of the athlete admits.

I just ran across a story from 2001 that quotes a study that said in the late 1990’s, ED at elite schools was the equivalent of adding 100 points to your M+CR SAT and applying RD. No idea if it still holds that big an advantage, but it’s not a bad analogy and it sounds close even today.
