1 cup of water
Put the eggs on the trivet in the Instant Pot
Bring to pressure and cook for 5 minutes
Let pressure come down for 5 minutes then release
Put in an ice bath for 5 min

Rack of lamb is what we usually have as it’s my youngest son’s favorite. Our cherry blossom is in full bloom now though and it might be our last chance to eat sushi under the tree, so I’ll play it by ear. Might get lamb shanks if I see them.

My only issue is sometimes the eggs from my older chickens will break. The egg is still fine and I use those for egg salad.
We are doing a brunch at D1’s new house since she has a lovely back garden and wants to host. Her bf is smoking bacon both regular and turkey which is always amazing. They will also make pancakes. I will bring a fresh fruit salad and this breakfast casserole:
D2 is bringing the prosecco and various fresh juices for the mimosas.
I am doing an Easter egg hunt for all of the “kids” with fun prizes.
I boil eggs a lot, cover eggs with water, bring to a boil, turn off heat and cover for 15 minutes, drain and cool with ice and water. Very easy to peel and no green. My son thanked me for teaching him, a fraternity brother told him to make him hard boiled eggs when pledging.
I am going to eat 5 pounds of jelly beans. Probably won’t have time for anything else.
We do it very similar to all the other descriptions except we go 6 minutes.
I do 3 minutes on “beans” setting on a rack (about 2 cups of water added to create sufficient steam pressure) and NPR. The eggs continue cooking while pressure is being released.
I don’t think I’ve ever used the bean setting!!
Trying to satisfy many differing tastes, I decided to try lamb shanks this year. i’ve eaten them but never made them. abasket, would you mind sharing your recipe? My courage is failing me now that I’ve started looking at recipes lol
Similar to this one though with a few edits depending on what we have in the house. The carrots really add a nice sweetness to the sauce. The Middle East market where I get the lamb shanks will actually cut them for me - each lamb shank in 3? Is easier to serve for a meal where there will be lots of other meal choices. It’s not hard!

I was just at the store and I completely forgot to look at the candy:(. I love jelly beans and malt balls.
We are doing brunch. Blueberry muffins, coffee cake, French toast casserole, an egg/potato/sausage casserole, fruit, mimosas, etc….
We usually do a curried lamb roast with potatoes, but this year we’re at FIL’s and guess who doesn’t like and won’t eat lamb… so I’m doing a ham roast with mashed potatoes and gravy. Not sure what veggie(s) yet. Maybe kale. Maybe I’ll try to get him to try edamame.
It doesn’t really seem like Easter without any kids around. The Easter bunny always brought candy for our kids, even when they were college aged and a little older, but none are around now so it’s just FIL, H, and me.
I definitely still do baskets and we play games. I feel quite sure my “kids” will never not want one!
I bought my lamb shanks this morning at a specialty market but went to Costco afterwards and saw a few lamb options that did not seem that expensive.
The Easter bunny sent a care package to our son this week. Among the jelly beans, Cadbury eggs, pastel M&Ms, and solid milk chocolate rabbit, some fun toys* were tucked into the green plastic grass: super balls, Duncan yo-yo, Hot Wheels car, Pez, Slinky, and a large tube/wand of liquid bubbles. They’re never too old.
*The year the bunny included ten cans of Silly String in the basket, his dorm parents were not amused.
