Husband is smoking a ham. I am making Mac and cheese, sautéed green beans with shallots, roasted beets salad, regular green salad and carrot cake for dessert.
Prime rib and Yorkshire pudding.
We always have dinners for holiday meals so this time I suggested we have brunch instead. Unfortunately, due to the religious services of my SIL, that wasn’t going to work out timing wise. She is also a vegetarian, and my mom, though not a vegetarian, is not a big fan of beef. Nor am I for that matter. So rather than get an expensive cut of meat, we are having a stuffed pork loin roast with roasted potatoes, asparagus, wild rice and arugula salad and whatever other vegetarian dish my mom brings. My father is making the appetizers.
We are doing brunch because D needs to get back to school.

I will be flying home from Texas Easter morning. Didn’t realize that when I made my travel plans. I guess I’ll ask my husband to stick a ham in the crockpot.
Easter is our holiday to host. Have not had it the last two years due to Covid. We are doing it on Saturday instead of Sunday.
Our menu will not be typical! Everyone is sort of bringing their “thing” - and the combination of everything is pretty wild!
I’m making braised lamb shanks in a tomato-red wine reduction, roasted vegetables, couscous. Also mashed potatoes and a pineapple casserole that my niece has requested. I’ll make a relish tray/dip for munching on pre-dinner.
Other family members are bringing kraut and kielbasa, mac and cheese, hot cross buns, green salad and probably a couple things I don’t know about. A niece is working part time at a bakery so she is bringing stuff from there for dessert and I will provide ice cream and fresh whipped cream for the sweets.
The lamb/veggies/couscous is in honor of my mom (who died in November) who was from Morocco and helped my kids to love to eat this type of food.
DH will be out of town so I’m going solo to a family/friends gathering. I don’t really know why, but everyone loves my deviled eggs - so I was asked to bring lots of them. I steamed 60 eggs last night to get a head start. I’ve heard that fried chicken, key lime pie and hummingbird cake are on the menu. I’m sure it will be a delicious spread.
I would love a tried and true deviled egg recipe or technique. If I have had made them before it’s been ages. I’d love to make some if I have time. Anyone have one to share? I think I like filling sort of in between smooth and chunky.
I’m interested in the pineapple casserole recipe?
We are brunching…I will make a pork loin, grilled asparagus, patatas bravas (my FIL is Spanish) and an egg strata with something in it. Swiss cheese and broccoli, most likely! It is my birthday and D23’s birthday is the day before so I will make a “coconut bunny cake” for us.
Deviled eggs are so good…when someone else makes them!!
This is the pineapple casserole recipe. It is really good though I know, unexpected. It’s one of my assigned dishes at Thanksgiving - but we haven’t done a family T-Day in two years either so my niece who thrives on tradition asked me to make it for Easter.
I cut down on the sugar, flour, cheese and crackers and butter in this version. LOL, put keep the amount of pineapple!
Our day will start with deviled eggs (after the outdoor egg hunt, the 5 kids are 19, 19, 21, 23, 25), we are having spiral ham, asparagus, Brussel sprouts, and manicotti (crepe style, so some can be gluten free).
I only use mayonnaise, mustard, salt, pepper and sweet pickle relish. The yolks get pretty smooth, but there is still some texture from the relish. I pipe the filling in with an open star tip and dust with paprika.
I think my eggs improved when I started steaming them rather than boiling. It seems the whites are more tender plus you don’t get any green coloring on the yolks.
Does anyone instant pot their eggs for deviled eggs?
My deviled eggs have mayo, a dab of horseradish, dijon mustard, dill pickles.
You can also add curry for different taste. Also, can add pesto for yet another. Or put chopped bacon on the top of the egg.

The only way we do hard boiled eggs is in the instapot. Perfect every time and they peel SOOOO easily.
For dinner we’re having a Manhattan beef roast. I haven’t decided what we’re having along with it. We’ll have brunch earlier in the day. I’m sure there will be deviled eggs sometime during the day - I love them!
If you could share your instant pot recipe for boiled eggs I’d appreciate the amount of water, # of eggs and cook time. Then I’ll be quite about boiling eggs.
Just the two of us, normally one daughter who lives close by will be home, but not this year, she has a concert to go to in another state. So we will have rack of lamb with vegetables, fresh strawberries and ice cream for dessert.
Ohhhhh, rack of lamb is my favorite! If we were not having my parents, brother and SIL, that’s what I would be making.
