Easy summer desserts for dinner party

@BunsenBurner - this cake looks amazing. I will have to save this for a time when I have girl friends over since H and D1 are not fans of coconut.

Iā€™m Gulf Coast Florida, and there is a local pie place that makes their key lime pies with Ritz crackers. I have never had it, but my friend loves it that way.

I am gluten-free, and I use GF animal crackers (Glutinous) brand for my key lime pies. Just made one yesterday as I have company coming in from out of town. I also use the very easy recipe on the back of the bottle of Nellie and Joeā€™s.

I was about to write that I avoid coconut in shared desserts. I love it, but many folks do not.

I just made magic bars with gf graham cracker crumbs, I also make gf crisps a lot in the summer. I made this yesterday, it appears to be gone so I guess it was good. Gluten-Free Peach Crisp Recipe - Cookie and Kate

I am planning on skipping coconut as it looks like it is only used for dusting the cake. I much prefer almonds or macadamia nuts for this purpose! I bet it will taste as good or even better.

I better get going with the baking before we get hit with another mini-heatwave!

Summer deserts for a dinner party at our house are based on whatever fresh fruit is available. In my area, strawberries, blueberries, and peaches are available at local orchards in the summer. I cut up peaches and add vanilla ice cream (my preference is Talenti vanilla gelato). Other times itā€™s strawberries and bananas or strawberries and blueberries. If I am in the neighborhood of our local ice cream stand, I will buy a few pints of hand-packed vanilla ice cream.

Iā€™m the laziest person in the world, so, if there is a Costco where you are going, I just bought a key lime pie. I told you I am lazy and hot.
(Itā€™s hot here in SD county and I have not been cooking unless itā€™s the microwave or crockpot.)

The Costco Tuxedo cake is my second option. I usually make something ā€œimpressiveā€ when I do dessert, but I just donā€™t have it in me this weekend. Will do some version of key lime pie, bc itā€™s very easy, and the Tuxedo cake.

Talked me into it. Key West lime pie- had to order the Nellie & Joeā€™s juice as there is none I could locate near where we are visiting in Seattle. Should get it Monday.

OP here -
Well now dinner is off. Hosts exposed to hand, foot and mouth disease.
My friend already picked up the cake from Costco, so guess we will be real :pig: :pig2: - there are only 3 of us to eat it.

Freeze the rest in slices so if you have impromptu guests you can feed them dessert!!! :slight_smile:

But also enjoy some this weekend.

Interesting idea. Iā€™ve never tried freezing cake before.

Most cakes freeze well. Our local Euro deli gets all sorts of cakes shipped from Europe - frozen. This reminds meā€¦ I have a package of their frozen Napoleon pastries in the fridge which I thawed out a couple of days ago but our guests canceled their visit, so have to dispose of the pastries somehow! :slight_smile:

And what a bummerā€¦ I will not be making the lime cake today. There is no way Mr. and I will be able to eat all of this sweetness! :slight_smile:

I do this all the time! Slice it before you freeze it if you think you might want to pull out a slice or two at a time. Put it in an airtight container or even a ziplock bag. I will even cut leftover slices in half and freeze - just so I can have a little sweet when I want it, but not a whole slice of cake!
