Egg prices, and impacts you are seeing

Our breakfast is 1-2 eggs, cup of Greek yogurt or cottage cheese, cup of fresh berries or some melon, maybe a slice of rye toast. We get berries at Costco- best price around, although TJ is pretty competitive, too. I usually hunt for Driscolls berries; their strawberries are the best.

Cage Free just means that the door to the cage is open. Chickens that make cage free eggs rarely leave the cage.

My step sister gave me me a dozen eggs from her chicken. Harder shell but the eggs didnā€™t taste different enough to tell the difference from ā€œregularā€ eggs. Another step sister also has chickens on her land. Free roaming dogs and workshops too.

I had a cinnamon roll for breakfast today, yogurt & fruit yesterday, sometimes oatmeal. One day last week I did eat avocado toast with a sunny side up egg. Iā€™m rarely hungry right when I wake up so most of my beeakfasts are really brunches but they are not usually eggs. I like eggs but lotta cholesterol. My d22 just had scrambled eggs for her supper. My husband usually has a breakfast wrap with hard boiled eggs and greens.

I prefer to support our local farmers when we buy eggs. We live in a place with a super vibrant farmers market culture.

I just ate a toasted cheese sandwich (healthier than itā€™s grilled counterpart since no butter is used). Itā€™s quick and Iā€™m heading off to church in a few minutes.

The last time I had eggs for breakfast was a week ago Saturday - 2 eggs over easy with stir fry veggies on the side. (potatoes, peppers, onions, napa cabbage, mushrooms, yellow squash, zucchini, spinach, beet greens + spices) Iā€™d have done that yesterday too, but we opted to sleep in, so didnā€™t have as much time - thus, leftovers.

One of the three days at our ryokan in Kyoto we had tamago, and it was always one of the choices at the buffets at the larger hotels. I love it, so yum!

Breakfast foods are extremely carb-heavy: bagels, muffins, pancakes/waffles, etc.

Being a type 2 diabetic, I often have a single egg for breakfast on an english muffin. Gives me protein and a lower carb alternative.

Egg supply and pricing at my local Weis Markets this morning.

I think weā€™ve proven that supply is no problem in some areas and a big problem in others. Or at least they are more scarce and may have a limit on cartons purchased.

If you have plenty on your shelves GREAT. Color Easter eggs early, make a huge omelet, eat eggs salad freely!

If you donā€™t hopefully you can get your hands on some and just be a little more stringent in your use.

This morning I made a potato/veggies hash from some leftovers. normally I would make each person an egg on the side - today I just scrambled one egg in the last couple minutes and called it a day.

It seems that some still like to see what conditions and prices are in different areas. For reference, this is northeast Maryland. If you zoom in you can see the individual prices on the individual products.

My local supermarket has large free-range eggs (their store brand) for $3.99/dozen. I buy whatever is cheapest (takes me a few weeks to go through the dozen although the previous dozen went fast due to latke season), and this is what I will buy today.

I had ā€œmyā€ two ingredient banana-egg pancakes this AM. And the plan is to have my scramble after a run.

I really have to figure out who on this forum turned me on to these banana-egg pancakes and thank them for the post.

All this egg talk got me in the mood. We had poached eggs for dinner last night. We bake them in a muffin tin, then scoop them out and serve on English muffins with pesto and sriracha. They are delicious.

How long and what temp do you do them in a muffin tin? Is butter or spray necessary?

Yes, spray pan. Preheat oven 350. Crack egg in each muffin cup and add a tablespoon of water to each. Can also add salt and pepper.
Cooking time is the tricky part!
We do 10-11 minutes . We like runny yolks. They can look really undercooked, but they continue to cook once out of the oven.

For just one quick poached egg, I crack open into a custard cup (or sometimes a Corelle coffee mug) then cook 30s in microwave. I usually place a paper towel over the top because once in a while the egg explodes.

After church today, I used two of my precious 40-cent-each-lowest-price eggs to make pumpkin bread from scratch on a cold day. Yum!! The recipe is more like pumpkin cake.

This thread definitely got into my head todayā€¦had two eggs over easy on wheat toast with a slice of cheese, a few leaves of spinach and a splash of Old Bay sauce for lunch.

If youā€™re curious about all the different labels, hereā€™s what the Cleveland Clinic has to say about them. They leave out one note of consideration thatā€™s important to me. Vegetarian fed eggs are NOT good for the chickens. Chickens are omnivores. If they donā€™t get adequate protein, often from meat products (or bugs, worms, etc), they will tend to eat each other instead. I wonā€™t purchase those at any price, esp not for higher prices.

For us we choose Certified Humane when we need to buy eggs (if our chickens arenā€™t providing enough for us), but thatā€™s us. Everyone is free to buy what they choose. Iā€™m providing the link in case folks are curious.

So if I have certified humane eggs that are cage free and vegetarian fed chickens, they really arenā€™t humane?
ETA - after reading this article I donā€™t see how cage free can be certified humane.
