Extracurriculars?

Can you guys recommend some extracurriculars for me? Any well-known programs in the tri-state area would be helpful (i.e. Science Olympiad, literature contests, Saturday university programs at reputable schools).

Also, is it true that universities like to see gradual improvement? I'm only a sophomore and my grades are generally high Bs to As. By the end of senior year, I plan on rising everything to the A level (there's already improvement in my 2nd semester. The reason why my grades were low was because of my seasonal depression). Would universities such as HYPSM favor these kinds of trends?

I plan on jacking up on my extracurriculars in my upperclassmen years, however having only 2 years in any amount of clubs does not look well. I've seen the "Chance Me" posts and everyone who has been accepted into HYPSM had a ridiculous amount of extracurriculars for an extended amount of time. If I accomplished as much as they have but in half as much time, would that be better or worse?
