I'm sort of confused about the whole tax forms and updating the school on the new taxes. I submitted the FAFSA a few days ago, but my EFC is $0 because my parents are separated and my mom has literally zero income, zero investments, and has maybe $900 in her bank account (I pay for a lot of my own stuff and will obviously be paying for school myself). She wont be filing tax forms because she was unemployed (did not apply for unemployment or any government assistance), which was stated on the FAFSA. I read that people are supposed to update the school or the FAFSA when they file their taxes for the year. There won't be any taxes filed, so what do I do?

You do nothing. You sent the FAFSA to the schools in which you applied. They may want a notarize letter detailing your family situation but they (FA Office) will notify you if they need additional information.
