food quality and health at universities and colleges

You bring up a relevant point about K-12. We live in northern Virginia (Fairfax County), which has about 180,000 students. You can take a look at the website (FCPS.edu) and see the lunch menus. Our school lunch program has won national awards, and although some of my friends wonder why, my husband and I have marveled at how lunch offerings have improved since our days. This is not to say that it’s gourmet food. A few years ago, I searched the area grocery stores (unsuccessfully) for the low-salt version of the ramen noodle soup that was being served at the schools. The boys weren’t into cooking and I couldn’t always be around to satisfy a demand for soup. Currently, one of my sons packs his own lunches and the other eats at the cafeteria.

Just an FYI…I was MUCH more concerned re: “food quality and health” when I (stupidly) looking into the fridges in my kids’ off campus residences :)
