What if you are interested in graduate school after attending a service academy? Is it possible in any way to plan for this? Let's say you're a math student who wants to enter a field important to national defense such as cryptography?

Yes, check out the army website which explains programs for USMA and ROTC cadets. It’s the Career Satisfaction Program. Basically there are 300 spots for USMA cadets willing to extend their active duty service by 3 years (normally for a service academy cadet the active duty requirement is 5 years and 3 years in the reserves). Under this program a selected cadet would serve 8 years active duty. If the cadet chose to exercise their right to attend a 2 year graduate program they would do so while continuing to receive their normal base pay and benefits. Tuition and fees would be paid by the Army. After grad school the cadet would pay back the Army with 6 years of active duty servce. If the cadet chose not to exercise their right to attend a grad school he or she could leave the army after year 8 fully qualified for maximum benefits under the New GI bill and have no reserve duty obligation.

I believe this is how it looks:
IF you select for Graduate school ADSO and choose to actually attend:
5 active duty + 3 ADSO +2 graduate school attendance +6 active duty (graduate school repayment) = 16years active duty
If you select for Graduate school ADSO and opt not to attend:
5 active duty + 3 ADSO active duty = 8 years active duty no reserve duty required fully qualified for new GI bill
