<p>A sweet potato or an apple cooked in the microwave is nutritious. You can microcook white rice in a big glass bowl with a lid. Put a cup of rice in two cups of water or chicken broth, microwave at 100% power for 5 minutes, then 50% power for 15 minutes. There are also many healthier can or boxed soups out now. Oatmeal microwaves well and is very filling and inexpensive. I second Quinoa. I am guessing you don’t have much freezer space so can’t buy too many frozen meals. Greek yogurt is good for the mini- fridge.</p>
<p>Right Foods has some good soup cups that are low calorie - Curry with Brown & Wild Rice Fruited Pilaf Big Cup and Pad Thai Noodle Soup Big Cup are my go tos. It’s all vegetarian:)</p>
