So the question is, large curd or small curd? I grew up eating small curd, but once I had large curd I’ve never gone back. I prefer the creamy texture of the large better.
Small here!!
I really like everything bagels (with cream cheese of course). I’ve been really cutting down on carbs and cottage cheese sprinkled with everything seasoning really helps curb that craving.
Hmmm…this makes me think…the cottage cheese could also take the place of the cream cheese. If you drained the cottage cheese a bit, I’d pile it high on a 1/2 everything bagel (carbs still though that way, but maybe not as much empty calorie fat).
I checked my cottage is is small curd, I have to check when I go shopping next whether they have large curd or not.
To take that idea a step further, scoop out some of the bagel. You get the texture and taste without so many empty calories. I like cottage cheese on a baked potato with salsa too. I am increasingly concerned with diet and the impact on bone density, so am trying to get more calcium through my diet as best as I can. I just got out of a walking boot for what seems like the two millionth time and my wonderful foot doctor told me it was time to reconsider some life choices - diet among them.
Poor man’s burrata: I top my cottage cheese with chopped fresh tomato, drizzle of olive oil, salt, pepper. Most important to me is having the pulpy seedy part of the tomato in there (love that stuff). If I don’t have tomatoes I make do with crystallized lemon powder instead.
When I have bread, which isn’t too often, and it’s of the doughy variety, say like when I go out and treat myself to a Banh Mi, scooping out the inside of the bread is a common occurence for me. I refer to it as performing “surgery” on my bread. And then I reload the middle part.
As for cottage cheese, I’m “ambidextrous.” I’ll eat small or large curd.
This really has nothing to do with anything, but all these scooping bread comments remind me of when I eat a Big Mac (and “regular” large fries, and a Diet Coke), once every couple of years. I take out the middle piece of the bun, because it’s too much bread.
I can usually resist bread at restaurants, but if it’s sour dough, I’m in trouble.
I like “Good Culture” cottage cheese - they have a whole range of options. The other thing I’ve been doing is purchasing single serving containers of things like yogurt and cottage cheese in an attempt to be more accurate with appropriate portions.
Bread is a real problem for me. I try to buy the healthier options - Ezekiel or Dave’s Killer varieties, I think, are better - but our Coop sells local bread that is very, very hard to resist. Easier to resist when you don’t buy it in the first place!
Well, my new healthy thing that I am doing is iced herbal teas. I don’t really drink soda at all, I’ve pretty much cut out wine/alcohol, and I used to loooooooove seltzer. But it was giving me terrible heartburn. So now I’ve started making weird iced teas. Hibiscus and mint, raspberry and mint, blueberry and citrus. I have a pitcher, I put in 4 tea bags and fill it up with filtered water and just let it sit in my refrigerator. I still have cravings for seltzer (ahhh, the weird, cold corrosive taste of taste of it!) but I’m happy to have found something new and pleasant to drink. The internet is trying to get me to give up coffee and embrace coffee alternatives but…please world, leave me one bad thing to enjoy?
What are you seeing “new” about a reason to give up coffee? I feel like the coffee conversation goes back and forth forever!
If I never could drink another think besides water I’d probably be able to deal with it. I mean I like a small cup of coffee in the morning but if needed, I could give it up. Super not attached to beverages. Rarely drink alcohol and if I do it’s sort of just like at a party to have something in my hand - doubtful I’ll empty it!
I also love good bread. But I can control myself. I don’t do much in the way of a “sandwich” but I like bread for breakfast or a great garlic bread with pasta. Crusty is best! Or toasted crusty bread piled high with roasted tomatoes and garlic. A meal in itself!
I also like Good Culture. I’m guessing this is regional but also recommend Michigan brand (that’s it, Michigan) cottage cheese.
I’m “ambidextrous.” I’ll eat small or large curd. - I must be the same way because I don’t even check. A few years ago mostly bought fat free cottage cheese, but now I’m more likely to get 2% or 4%. The recent comments inspire me to try more types and brands.
I second the suggestion to try Everything Bagel seasoning…. mostly I use it on avocado toast. Coincidentally today was a day for real everything bagel cheese/egg sandwich, a treat while out doing many morning errands with my husband. One stop, well actually two, involved buying some veggies or backyard planting. Later this summer I bet the cherry tomatoes will be good sliced on toast with a bit of everything seasoning.
I am eager for summer tomatoes and all the other produce. It makes healthy habits so much easier! I am a fan of watermelon with TJ’s chile lime seasoning sprinkled on it. It’s good on pineapple too - but that’s not a “local” Virginia fruit.
It’s not local here either, I last bought 5 pineapples, $1 each, they were from Costa Rica.
I don’t eat bread a lot, just a slice in the morning. But my carbs are healthy carbs, like I had a bowl of pork barley, not beef barley, for lunch, I made this soup a while back when I bought a big pork loin on sale from Costco. Such a big piece of meat, I didn’t know what to do with it.
But today I had shredded carrots for lunch with the BBQ meat. This is for my eyes, it’s like a staple food here.
I’m “ambidextrous.” I’ll eat small or large curd.
I might call that “bicurdious” LOL
I buy that brand. It’s the only grass fed cottage cheese I’ve found and I only buy grass fed dairy products due to the better omega 3/6 ratio (among other things). It’s also one of the best tasting cottage cheeses I’ve tried. I try to limit bread as well but do buy Dave’s for my Sunday toast treat. Their Rye is my fav.
My neighbor introduced me to this salad 30+ years ago. Her mother-in-law introduced it to her 20+ years before that. Its official name: avocado cottage cheese salad. Unofficially it went by Dorothy’s salad (mother-in-law), then Kathy’s salad (my friend’s name) and my 32 year old daughter renamed it Tasty Salad when she was younger.
1 avocado , sliced and sprinkled with lemon juice
1 tomato, chopped
2-3 green onions, sliced
1 stalk celery, chopped
1 large dill pickle, chopped
2 hard boiled eggs, chopped
8-12 oz. cottage cheese
1/4 cup mayonnaise
*lemon juice to taste
Refrigerate
Note that it tastes equally good - perhaps even better the next day or the next …
Disclaimer: I hadn’t looked at the recipe in years because it’s second nature to me now. I use 24 oz. of cottage cheese, and as for the rest, I eyeball it. I do use all the listed ingredients but adjust the ingredients with more of this or that or all. Having just made it this week, I can tell you that I just chop the avocado(s) like the other ingredients (no slicing or sprinkling with lemon juice). I only used two hard boiled eggs. And since I like lemon juice I added plenty at the end.
(My daughter doesn’t like pickles but my friend Kathy suggested to her that it would be a mistake to omit the dill pickle. As far as I know, this is the only recipe that my daughter allows a pickle to enter.)
Anyway, I’ve seldom had anyone taste it that hasn’t asked for the recipe so thought I’d share it.
Today after a run I what I wanted was a granola bar, but I try to avoid having too much processed food. (The Kind mini bars are sometimes a compromise.) After some pondering I decided that switching to a a half banana with almond butter sounded good.
