So I intend on attending the University of Virginia, which is known for it's class difficulty. Valec's end up pulling 3.4's there, so I'm a bit intimidated. Next year I have the opportunity to either take AP Chemistry and AP Physics, or just one of the above. I want to take it so that I'll have college credit, but I know I'll be out of the running for valec. What should I do?

Not sure where you heard that, but it sounds like a bunch of nonsense to me.

It doesn’t really matter what you take. Personally, I think AP Chem will be more useful than physics.

UVA’s a very esteemed university that’s known for it’s class rigor. I mean I don’t know a university in the South that’s more difficult than it, besides maybe Duke, I believe UNC Chapel Hill and UVA are pretty evenly matched. It’s prestigious and i don’t know if you’re well aquainted with it, but I’m pretty sure it’s the dream of every student in VA, and most students in the South, to go there one day. I doubt I’ll be able to get in, and I’m class rank 7. So we’ll see. However, thank you for your help!
