How do extra, out-of-school classes actually look?

I'm interested in taking a few community college classes, probably two extra per semester, at a local community college. Mainly because my school doesn't offer courses in areas I'd want to explore. I'd probably take classes in Environmental Science, Philosophy, languages, maybe Anatomy or something like that out of interest. If I can handle my work with ECs this semester, then, in the Spring, I want to attempt to start learning another language.

It's silly to ask and I am doing it out of interest, I'm just curious to see if it would help at all. These classes are going to be a way to learn more about topics I'm curious about as well as an attempt to try to find my "true passions".

My main question is: how does taking an extra CC class or two look?
