I was going to take a college writing class this semester but it ended up interfering with my calculus class and I couldn't change it. Would it be okay to do an independent project for English with a teacher's okay instead of taking an English class? I would get the credits and everything and challenge myself. Would it look bad for Tufts, would they even accept it?

I don’t think so - a teacher allowing you to do an independent project is typically a sign that you’ve been found responsible enough to learn on your own, and/or gifted enough that current classes wouldn’t benefit you. You could always have your teacher write a note explaining the project, or explain it in her rec.
