Pork Chops with mushrooms and wild rice tonight! I love that I can come home and say "omg, it’s 7pm - what the heck am I going to cook? " - and then have something ready in 30 minutes or so! (from gathering ingredients till ready to eat!)
This sounds good if you like Indian food, which I do.

Last night I tried the short rib recipe in post 79 by @4beardolls. I had bought boneless beef short ribs, a protein I’ve never made at home before. Recipe was easygoing to follow. I substituted in boneless ribs as the recipe was for bone in short ribs, I also reduced the recipe since I was cooking for just 2. I kept the cooking time the same.
Ribs came out tender and tasty. My H who prefers a kick to his food put horseradish on his. I think I could have added a bit more garlic. I served it on top of quinoa. I would make it again.

I did read that quantity doesn’t matter for cooking times. Whether you are cooking for 2 or 6 the time remains the same - would you agree??

I made the Kalua - so easy (other than the fact that I don’t seem to quite understand the manual settings on the Instant Pot so it was not cooked - not sure it was ever turned on, sigh. I redid it by pressing the meat button and just changing the time. I was cooking it late at night after an evening out so it would be ready for the next evening and ended up not going to bed till 1 a.m.!). It was very tasty. I plan to try more pork recipes - maybe carnitas next time.
FWIW, I did not know Boston Butt and pork shoulder were the same thing. I was irritated my husband bought butt so my son in law gave me the history of why it is called that. My response - but my butt isn’t my shoulder - no wonder he thinks he has a weird mother in law!

How was the chicken? I love capers. Did you use bone in breasts?
I used boneless free range chicken thighs from Costco (chicken breasts do not do well in Insatpot, as far as I know), and Mr. licked his plate clean. I substituted white wine for vinegar and skipped the last step (making the sauce) altogether. Served with buckwheat pilaf and a glass of the leftover wine.

I’ve seen some back and forth on the success of boneless chicken breasts in the IP. I surely will try some recipes with them because generally (besides chicken wings) it’s all I use! Wondering if you cut the breasts in smaller strips or chunks - as opposed to a large breast piece. I always cut my chicken anyway - can’t stand a big hunk of meat !

It was a lemon, rosemary, garlic whole chicken. My d bought a way too big chicken - 7 lbs, but I did the 6 min per pound plus 2 minutes and it was perfectly cooked. I did make a little gravy out of the liquid in the pot.
It was good, but not as good imo as Ina Garten’s http://www.foodnetwork.com/recipes/ina-garten/lemon-chicken-with-croutons-recipe2.html
