In some of the messages there is references to the crazy timing issues regarding med school interviews. Don't know if I missed something in one of the threads, but could someone explain this to me.

You can be offered an interview day anywhere b/w August of one year and April of the next (that's roughly the entire application cycle). Don't go out of the country during that time.

Do they all make an offer at about the same time? How bad is it to say yes to one place and then change your mind if you get an offer at a place you like better? Is it similar to choosing an undergraduate?

Med school decisions can be released anytime b/w October and April for regular decision. You are allowed to hold multiple acceptances. That is perfectly fine and normal. You just have to make a decision by May 15th.
