It's Chanukah! Anyone making latkes?

I make Zemiakové Placky for the holidays, which is a Slovak latke; why have I never thought of using a waffle iron!! Unfortunately, the only working one we have at the moment is a Captain America shield :joy:

Had some this afternoon at a party. Jelly donuts too.

Happy Hanukkah to all who are celebrating! Had some at my MIL’s family party yesterday, and will make some later this week (cooked outdoors on the electric frying pan so my house doesn’t smell forever).

Last night, and probably multiple times throughout the week. They’re very easy to make. Here is my mom’s excellent and easy recipe: Makes about a dozen medium sized latkes.

-4 large russet potatoes, peeled, coarsely grated, and drain off as much potato water as you can.
-One medium onion, grated and leave in all the onion juice.
-2 beaten eggs

  • a bit of matzo meal (can use plain breadcrumbs or even flour if necessary)
  • peanut, canola, corn, safflower, or sunflower oil for frying

Combine grated, drained potatoes, onion and onion juice, 2 beaten eggs, and a bit of matzo meal to hold it all together. Spoon into hot oil and flatten, and fry until light golden brown both sides. Drain on paper towels and salt lightly with coarse ground salt (kosher salt). Serve immediately with unsweetened apple sauce and sour cream.

This year’s latkes.

My “secret” is to prep the (russet) potatoes in two stages. First run through the grating disc on the food processor and squeeze out moisture. Then put back in the processor with the chopping blade and pulse with the onion.

I made some the other day. This year, in addition to having my vent on high, I moved my big covid-inspired air purifier next to the oven. It was incredible. No leftover smell within 10 minutes! And delicious.

Do people lean applesauce or sour cream? Or do you feel a different but spot on experience with both?

I just want add a few chives to the sour cream… :slight_smile:

I generally serve/eat latkes as a side dish with a meat meal, and applesauce is my go-to.

If I’m featuring latkes as more of the main event, I like to go a bit heavier and top with sour cream and a slice of lox.

Sour cream and chives, but we don’t like applesauce.

I like sour cream and applesauce both; also cinnamon sugar.

We went to the Chabad menorah lighting at Liberty Station and there was a local reporter next to us. She was talking with the studio anchor and discussing a spot she’d recorded earlier in the day. She helped with latkes and apparently that family had homemade applesauce - and cranberry sauce. That was a new one for us,

My husband says Russian Jews like caviar on their latkes.
