I'm conflicted about what science class to sign up for. I don't want to bite off more then I can chew. I'm taking:
AP Calculus AB
AP English Language & Composition
Honors World History
College in the Schools Spanish (basically an AP)

I have talked to some upperclassmen and they have told me that Honors Chemistry is pretty challenging, and if I'm taking a lot of other harder courses I don't know if I can handle my schoolwork and extra curriculars, volunteer work and an after school job. I'm not really interested in going into a science field, but I'm a pretty solid science student, getting a 96% this past semester. On my application will it look suspicious if I drop from honors to regular? Or should I take the honors and risk getting a B? Does having one regular class really make a difference?

Depending on where you apply, it may/may not matter more. Some colleges will look at your application and possibly wonder why you did drop down, but the fact you are involved in several other activities and volunteer work, and have a job may explain that and will be understandable.

If you’re going to be taking AP Calc as a junior that really shows you’re a pretty good student in the math areas.

I doubt you dropping out of one honors class will be the reason you won’t get accepted to X or Y university, but of course, doing well in the honors class is better than doing well in the regular class. When I talked to an admissions officer at Wash U, she said the admissions staff preferred to see a B in an Honors class than an A in a regular class. I’m not completely sure if this is universal but it gives you a pretty good idea of what it may be like at one of the top 20 universities.

Also I think this may be posted in the wrong section.
