I was wondering if there are any schools out there that aren’t tiny liberal arts colleges–ideally, the school has at least 3,000 students or so–that still care about teaching undergrads as opposed to being focused more on research. One example I’ve already found is College of William & Mary. If the school doesn’t have a very long list of gen ed requirements, that’s a plus.
I go to William & Mary! Can confirm that the professors care a lot about undergraduate teaching. Other colleges may include medium sized schools such as Emory University, Tufts University, or Princeton.
You will find a few larger schools on the following two lists:

Miami University in Ohio has a 17:1 student to faculty ratio and “is ranked #2 among public universities for commitment to teaching and has been in the top 3 for 6 years in a row. — US News & World Report, 2016”. This was definitely confirmed on my tour - our tour guide saw her advisor and he stopped said hello and cheerily told us that “She was the best student at the school”.
The Claremont colleges give you the benefits of strong teaching and the bigger grouping of students with the 5 colleges clustered together.
