Non-STEM prestigious summer activities/programs?

Hi!
I’m a high school sophomore trying to plan my summer. I’m noticing that a lot of the prestigious programs are in the STEM fields, which I am not interested in because I am a bit more humanities inclined. My interests lie in economics, business (not looking for incubator programs though), social entrepreneurship, and international relations.

  1. What are some prestigious and rigorous summer programs that will provide an enriching and valuable experience (and will also help with college)?
  2. What are some equally valuable activities I could pursue instead of a summer program which will be a good experience (and be good for college apps)?

A little background:
-3.8 GPA, rigorous courses
-Started my own business in the Gen Z social innovation space
-involved/lead clubs promoting activism/social impact
-Quiz Bowl nationally ranked
-competitive pianist: state champion

I’m into STEM, so I’m not familiar with specific programs, but other activities you could do: economics/business research (maybe find a mentor, do a project, write a paper), grow your business (lots of students claim to be into entrepreneurship now, but if your business is seriously impactful and well-known, that’ll be a boost for college apps), intern with representatives in local/state/national government, etc.
