Not deep but amazing ECs

I know colleges want to see quality, not quantity in ECs, meaning focused on certain areas rather than just average in all.

for ex… if a person is passionate in writing, he may start writing club at school, write for school paper, publish books, publish competition, tutor in writing, etc…

but…
if a person has an amazing talent such as being top 10 in USA for Rubiks Cube, which surely would amaze AOs… but theres really not much depth u can get with this talent, unlike with other ECs…

how would this be viewed?

Sure there is. Using your example, you could also start a Rubik’s cubing club at school. You could go to an elementary school, children’s hospital, or any group of people really, and teach them to solve it. You could volunteer at competitions or make a Youtube channel. And then there’s whatever amount of time you devote to practicing that shows commitment in itself. It doesn’t have to be related to an academic or professional interest; it can just be for fun. Among other ECs, I think it would be a positive, showing that the applicant is well-rounded and hardworking.

I’d think top ten would suffice as “interesting.” Now get back to the rest of your activities list. The depth they want isn’t about the Rubik’s Cube.
