Hi! I was hoping to learn matlab/python/linux online (any of them), and am looking for an online course on the quarter system. I am hoping to take from a reputable university – UC, Ivy League, good schools similar (Brown, Duke, Northwestern, etc). I am unable to find anything.

Is there a reason you want an academic course? There are thousands of free and effective resources to learn these things on the internet. Moreover, Linux is an operating system–if you really want a course, you might find courses offered by local groups or libraries and community colleges or something, in addition to the numerous websites that offer courses in one form or another.
Matlab and Python are programming languages. Search for computer science and/or engineering courses on the fundamentals of programming. These types of courses teach principles of programming. They may or may not utilize Matlab and/or Python to do so. As a beginner, it’s more important to learn how to program than it is to learn a particular language. Matlab and Python are just tools that allow one to program, but you can try to find courses in which these languages are utilized. However, I would recommend using the internet. Find a tutorial or website(s) you like and start learning. I don’t know many for Matlab (though I used the official Mathworks Getting Started guide, available free, to start learning, and it worked out well for me). For Python, I like Learn Python the Hard Way (http://learnpythonthehardway.org/book/).
