I love the open door admission policy Case has - I don't feel the pressure to choose a major when I'm applying and I don't have to worry about not being able to major in what I want if I have a career crisis and want to switch from (Example here) engineering school to business school or to the arts.
Are there any other schools with an open door admissions policy or something similar that is flexible in going across disciplines and schools? Preferably academically rigorous schools. Thank you very much!

MIT has this same open door admission policy. You can major in architecture or urban planning, science, engineering or business or humanities at MIT. All majors, even music require a core that is focused on math and science. Most liberal arts colleges offer this type of admissions too. Core requirements vary a lot, with some liberal arts colleges literally requiring no core, and others like University of Chicago requiring a VERY rigorous core curriculum.

Obviously if you want to do engineering you should start with the beginning courses (Calc, Physics, Chemistry, etc)
