I just took the SAT Physics Test, and was wondering how the curve will be determined since I took it today, on an alternate date. Also, I left 7 blank, how much do you think I can get wrong to get 800? or 750+?

For all i know you can probably leave 11 blank (assuming you get the rest right) and still get an 800.

actually you can leave 15 blank, also assuming that you get everything else correct (according to PR prep book)

15 blank! Really?

Hmm. I have the PR book, and you can leave only 7 blank according to their scoring charts. I have the 2006 edition. Maybe anonamous has an older version and PR has changed their conversion charts?

I think the Official Guide says ~12 points lost gets you 800. I trust the Official Guide. Although it depends on the difficulty of your particular sitting.
