With that prescribed plan... does it ever deviate, or is it all basically the same? And where can I find a syllabus for it?

Each Part 141 flight school has a different proscribed course that is approved by the FAA. It may vary on type of aircraft, equipment, whether ground school is a part of the program or separate from it -- etc. For example, it will take you longer to learn to fly on a new Cessna 172 with a Garmin 1000 glass cockpit then it will on an old Cessna 172 with the older, "steam-guage" instruments. Why? Because in the new glass cockpit, there is a big learning curve in just learning how to access the information, and many of the terms you don't even know, so you're learning the system as well as learning what pushing on the left rudder means. So, the "syllabus" should cover all the basics that the "practical test standards" the FAA sets for a private pilot license are covered -- so it's basically "the same" -- but it will differ among each each 141 school because it will depend on the type of aircraft they use and the equipment in that aircraft.

Each school should be able to give you a course syllabus -- after all, they want your money and the syllabus is their "catalog" of what they will do, how long it will take, the aircraft they use, and how much it will cost.
