For some early action schools I applied to, I had the option to send my best scores from each subject. This consisted of two tests, but I took the SATs three times. Do colleges want to look at scores from EVERY time you took the test, or should I not send my third score?

I sent all 3 even though the last 2 had my highest scores

It depends on their Score Choice policy for the SAT I (it is sometimes different than for Subject tests).

If they let you use Score Choice for the SAT I, then it is up to you to send whichever sitting(s) give you the best super score (if they take super scores).
