I'm taking 4 APs already:
AP English Language and Composition-Easy
AP US History-Easy, but time consuming
AP Physics B-Most demanding course. Very difficult for me w/o studying vigorously.
AP Statistics (Online)-Haven't started yet but believe it should be easy

I've heard that AP Art History (on Florida Virtual School) was a tough course and an even tougher exam. I'm only taking AP Stats and APAH to boost my class rank/GPA, although I am quite fond of Art and plan to take AP Art Studio senior year (I'm a Junior right now). Should I take AP Art History, is it really difficult, how much time can I expect for homework.

APAH is one of those classes where you better be taking it because you’re actually interested in it. It’s very much like a typical history class–not too hard but tons of memorization, like APUSH. I’d look at your senior year schedule (don’t stress about it too much yet) and see if you could do APAH then; at my school mostly seniors take it. On the real AP exam you will be asked to answer questions about pieces of individual works–not too bad–and write 9 short essays (some are only like a paragraph long though), so good writing skills are essential, but same goes for APUSH. If you can deal with APUSH, you can deal with APAH. As for the workload, you’ll just have to look at everything else in contrast and determine whether that’s overkill or not for yourself.

We can’t tell you much about the workload because the amount of work assigned is still going to vary per school (unless someone else here is from Florida and is taking that class online). Good luck either way. I’m taking it right now (in a real classroom) and it’s pretty fun.

Depends on your definition of ‘useless’…it is more of an elective than either a history or art class (though at my school it gets you art credit towards graduation), and on a college app it may show an interest in the arts when combined with other art-related classes on a transcript. Also, how useful/fun/interesting the class is will depend on the teacher–this class presents great opportunities for a non-traditional curriculum and even a field trip depending on where your school is, but not every teacher will take advantage of that fact (and for OP, it’s online, so I don’t know how that’d work).
But as I mentioned, the main reason one should take the class should be for out of interest.

Yeah, I meant “useless” as in, it’s not really a core AP class. However, OP is taking it for the grade boost. I really don’t think the material is that hard, but it is a lot of stuff to memorize. If it was me, I wouldn’t be able to handle APAH along with all those other AP classes. However, OP seems to be motivated and smart, so, whatever works.
