I have an full Amerindian grandmother but she was never documented and my father was never documented as Amerindian either although it’s pretty obvious when you look at my siblings that they are Mestizo’s (not so much for me since I inherited the recessive traits) rather than white Latinos.
Should I save myself the hassle and put down white?

The Common App will ask for your tribe membership number. Some schools will take you at your word. Others will only consider if you have the number because each of the tribes gets to determine who qualifies as a NA member (usually a %age of NA heritage).
If you have then proof, as @“Erin’sDad” says, then yes of course,
Some countries don’t have the kind of documentation that the states has up until just recently.
I guess what I’ll do is just list myself as white. I’m not really interested in having my parents run errands to fix something that isn’t that important to begin with.
Can your family or yourself document this?
You can also put “other” for race/ethnicity, and indicate “latino” and “Amerindian/native American”
