I have one more semester before I graduate from college and a summer before law school that I'd like to spend abroad to study another language.

Should I study Japanese or Korean? Which one is easier to learn? Which one will be more useful career-wise? Any reputable summer study abroad programs for either language?

I am already fluent in Mandarin and have intermediate Chinese reading ability.

Check out the instructors teaching the courses. Make an appointment with them and ask for their input considering your major and what exactly you want to do with your language skills after you graduate. That's what I would do.

Korean is currently an official language being sought by the US government for government employees. A combination of a law degree and Korean might serve you very well.
