I want to learn multiple foreign languages in college, but it’s not really feasible. Is it possible to just take some of the classes for one of the languages without majoring/minoring in it? (If I wanted to take something like Spanish AND Chinese, but couldn’t take both, could I minor in Spanish and go on to take some of the Chinese language courses without minoring in Chinese, too?)

I don’t see why not, as long as you have enough room in your schedule. Talk with an academic advisor
Assuming your trying to graduate in 4 years full time do a quick write up of all your required general ed, major requirements then put in what you need for the minor. Include any prerequisite classes for any if applicable. Then you can see how many spots you have left for free electives and use those for other language classes your interested in that you meet the prerequisites for.
This will be the biggest issue. Aside from any classes you need for the major/gen ed, scheduling may be an issue as intro FL courses, particularly in “harder languages” like Chinese/Japanese/Arabic, meet 5 times a week,which may cause conflicts with other needed courses.
