I want to go into engineering, and right now I'm taking Math II, and Chemistry. Any recommendations for the best 3rd SAT II to take?

Well, if you're going into engineering, you might want to take the physics sat II. But make sure you take AP physics b before taking the physics sat II.

I'm an upcoming senior and haven't taken that physics, so I don't think that's a possibility for me.

if you havent even taken physics at all, i would suggest you dont take sat phys. take bio. i looked at cal tech's sat 2 requirements and they say math 2c is a must along with either bio, chem, or phys.

take literature

Haha, and get killed by the curve?

I'm thinking either USH or Bio. Which is easier?

where are you applying? unless they want only math/science sat2s, i would strongly suggest taking ush or something else from the humanities to show breadth.

Maybe a language one?

I'm applying to Cornell, Vanderbilt, Stanford, Princeton, USC, GATech, UMich, UMiami, and maybe UCSD. I'll probably do USH.

Are 3 Subject tests needed??

No, but I might as well. Especially in the event that I decide to apply to a university that requires 3 in different areas.

Even if you're going into engineering I'd be inclined to do a non-sciency one. My son got an 800 on the US history - he took it in June having just taken the AP course and the class was reviewing for the NYS Regents exam. He didn't study for it at all specifically, but he was obviously well prepared. I don't know what your schools require, but I figure if MIT wants a recommendation from a non-science teacher, even techie schools must have some interest in how you are in other subjects. OTOH if you are good at languages at some schools you might be excused from the language requirement with a sufficiently good score. (Better than 600 for example at Harvard.)

Ooooo, don't forget Gtech doesn't count subject tests (ugh).

Hmm, I would personally say for for the third, I know that when I was thinking about this I just went for Spanish and it worked out for the best, b/c I think that it gives the admissions committee a better perception of you if you are not only skilled in math/sciences but language/social sciences as well, so if you're up for it I would definitely recommend a language, history, or lit subject test to appear more well-rounded, also, maybe I've got this wrong but I applied to Princeton last year, and I think I needed three, but hmmm, could very well be wrong about that.
