I am a student from China and I hope I can get three bachelor's degrees in Columbia University

Now my major is East Asian Studies (I will surely pay most attention to Japan&Japanese)

and I hope in the future I can also learn Math and Eco

I really love all of them "_*

Now the question is: Is it possible for a man to get three bachelor's degree in FIVE years?
(Sleep 7 hours a day and attend all the summer school courses )

or get two bachelor's degrees(Math&EAS) and one master's degree(Eco) a better choice?

You need to carefully read the requirements for each of these three majors on the Columbia website and see how the coursework could fit together. Double and triple majors are possible at many colleges and universities, but require very careful planning. It may make more sense to major in one subject, and do a double minor with the other two subjects. The minor requires less coursework and so should be easier to fit into your schedule.

Unless the degrees are offered by different colleges within the university, you will most likely graduate with only one degree. Your diploma and your transcripts would then read something like “Bachelor of Arts with major in X, Y, and Z”

Since you haven’t even started your program yet, I would suggest that you use your first two years to meet any college/university distribution requirements, and to test out your specific fields of interest. As you go along will be able to better define your goals, and there is every possibility that you will decide to eliminate at least one of these fields of study.

You don’t neee to major in an area to learn what you want to. One of the the purposes of most American colleges is to expose stdents to a wide range of disiplines. Getting 3 majors would severely limit your ability to gain broad exposure.
