Can scholarships be used towards paying for rent in a cooperative house?

It depends what the particular scholarship says it can be used for.

And it depends on what other costs you have as well. Typically, tuition and fees are paid by scholarships BEFORE room/board.

And remember that any scholarships above the tuition/fees/books amount will be considered taxable income for the student.

Thanks. I was mostly curious about whether there was a distinction between cooperative housing and traditional dormitory housing.

Sometimes, if the school is giving the scholarship, it will only be applicable to school-run housing. If the school is running the co-op, it would probably be fine. Other scholarships that apply to a variety of college expenses usually don’t care where you live.
