I am half Mexican and I’m not sure if I should write about my hispanic heritage

Pick something that is important to you. If your Hispanic heritage is important to you (and you think it goes unnoticed), by all means write about it. But take your time in selecting your topic. It is a very important part of your application and it should truly reflect who YOU are, not who you think they are looking for.
