What are "strong", realistic extracurriculars?

(Sorry if this is in the wrong thread, this is my first post. I'll move it/delete if any of you recommend me a better forum to post this question on.)

Right now I'm a sophomore in high school, I know it's a little early to start thinking about college but I've gained a lot of perspective on what top universities want from creeping through this site and really want to be prepared.
My extracurriculars right now are:

~ School Newspaper (since 9th grade, so ongoing)
~ Ecology Club (started this year, probably ongoing)
~ Warm-Up America Club (only 9th grade)
Also a Science scholar..sort of complicated to explain but people interested in science apply and get accepted and get all these different sorts of classes. Not really a club though, just a program. I volunteered as a tutor at a Saturday School all of last year and taught math/reading, but my father made me drop out this year.
I know they're really weak, but not many 'good' clubs are open for sophomores in my schools.
What are some really good extracurriculars to do? If any of you have been accepted into Ivy League schools (yea I'm annoying) or any other top-tier colleges, what were some of your after school activities? And honestly: do colleges look more for quantity of clubs or quality (staying there for 3-4 years)?
Thank you!

Those sound like fine ECs. Please don’t rearrange your priorities just for the sake of getting into Ivy.

Quality > Quantity any day of the week.

You don’t need to be involved in a club sponsored by your school for it to be an extracurricular; figure out what you’re interested in and make it an EC.

Thank you for the answers :)
