What does "level of applicant's interest" mean? Some schools have ticked it in their common data set as very important and honestly i have no idea how it may be shown...

Well it basically means how the student has show that he/she is interested in attending the school. There are many ways to show interest. If a school has an info session you can go and fill out a card there with your information. You could go on a formal tour, visit the school and sign the guest book, email your admissions officer with a question, or talk with professors.

For the schools that say it’s very important, ask on that school’s forum here on CC how people showed interest.

If you’re a long distance from the school and can’t afford to tour, don’t worry that you must visit. If you’re fairly close and don’t tour, that will be held against you.

A great cheap way to show interest: email or call the adcom who covers your area, and ask if they are going to be visiting your high school. If they are, or they’ll be at a high school/event in your area, you’ve got another opportunity to meet them. If they weren’t planning on visiting, they might (bonus for you). At the very least, you get points for being so interested in talking to them that you asked them to come talk to others. :)

From your earlier post, few if any of these schools consider interest at all.

Actually Brown does, and as you can see, me being intl practically ban shownig that kind of interest…pity

They may SAY they do, but I doubt it very much.

Brown may say that level of interest is important, but it is the only school we visited that did not have you sign in when you came for an info. session and campus tour. So I guess they are not all that interested in tracking it after all.

uff that’s good i was starting to worry

Request an alumni interview, if available and even if optional.
Many colleges offer this as an option, including in foreign countries. I checked the Rice web site, as that is on your list. “A dedicated corps of Rice alumni conduct interviews in 48 states and in 41 foreign countries and no distinction is made between on- or off-campus interviews.” I don’t think Rice is unique. Watch the deadlines.
