Your 1510 is fine unless you are looking at the most selective engineering schools like CalTech and MIT. If those schools are in your sites, I might retake (what are EBRW and M subscores?). If not, spend your time on ECs and application essays this summer.
I would encourage you to take the Math 2 subject test no matter the level of engineering school you are targeting.

Any reason that needs to be an “or”? If you’re applying to the top engineering schools, Math 2 could be a requirement - check the schools you are thinking of applying to. Many require 2 subject tests, and Math 2 (or either of the Maths) is often required to be one of them.
I agree that 1510 is fine except for the very top schools. It would be below 25%-ile at CalTech and 30%-ile or so at MIT. It’s above average or better at all other schools (unless I’m forgetting one or two).
