Knowing we would be holed up due to snow/ice storm, I got ingredients for chicken/sausage gumbo and chili.

But now I wish I had planned for homemade chicken pot pie. Oh well, the gumbo was good last night and we’ll have another cold spell I’m sure before spring.

Also made chocolate chip cookies. Rarely ever do that, but snow…

We’ve been eating healthy all week so splurging tonight (cold and rainy here!) and making the Marry Me Chicken dish posted a couple of weeks ago. I have some heavy cream that needs to be used up before it goes bad.

Tonight….meatloaf and potatoes. And there will be plenty left for leftover!

Collard greens white bean soup, it’s delicious, full of body thanks to the big pork bone left over from roasting. I used Japanese sweet potato instead of white potato because that’s what I have, it’s like adding a bit of sweetness to the soup, it’s a good way to use my collard greens from my garden. It’s served with homemade artisan bread.

It’s very easy.

Meat Loaf.

1 red bell pepper finely chopped
1/2 sweet onion finely chopped
1/2 pound baby carrots finely chopped

Brown the above in a frying pan with a little bit of olive oil until softened.

3/4 pound ground beef
3/4 pound ground Turkey
A large handful of regular bread crumbs
1 egg
TBS or so of Worcestershire and mustard each
A few squirts of ketchup

Mix these well….then add the somewhat cooled veggies and mix well.

Split in half and make two mounds on a cookie sheet. Bake for an hour.

The sautéed veggies give it a sort of sweet flavor.

Potatoes

Take some potatoes and peel and cut into 1/2-3/4 inch chunks
Toss in a bowl with a TBS of olive oils

Sprinkle with paprika and garlic salt.

I just put them around the meatloaf in the oven while the meat was cooking too. They were just right.

Does anybody here still make, or used to make the meatloaf recipe on the back of the Quaker oats box? I swear I could probably still make it from memory from the 70’s. Meatloaf was a frequent meal for a family of 7.

I hate tarragon as well! I guess it’s similar to other people’s hate of cilantro!

@CottonTales I make a meatloaf that was my husband’s grandmother’s recipe that uses oats, but it’s not the same recipe from Quaker Oats. Wherever it originally came from, probably a 1940s church cookbook, it is a family favorite for all of my kids. I never liked meatloaf, but I do like her recipe. It cooks in and is basted with a sweet but tangy sauce.

Even though my dh hates meatloaf and never grew up with it, I made this and he actually likes it

This my go to turkey meatloaf recipe; I double the amount of ketchup/ Worchestershire mix on top though, add mash potatoes, so good in the cold months :yum:
