Whatcha Cooking? - Comfort Food Edition

Thank you for letting me know that you did the chicken stew in the oven. I actually found my crockpot (I rarely use it) and have just finished getting everything ready to cook. Of course it is 83 degrees here today on the coast, but I’m sure we’ll still enjoy this.

The chicken stew in the crockpot was a hit with H and I. We had some crusty french bread with it. So I’m 2 for 2 with the marry me chicken and the chicken stew.

BTW you can do the potatoes in the microwave and just crisp the skins in the oven if you are like me and remember you wanted them for dinner about ten minutes before you want to eat them. For those who don’t know what chaat masala is, it’s a spice mixture.

those look delish! Adding to my list of things to try.

I have Paula Deens Mac and cheese in the crockpot now. If you make this….just remember to use 1/2 and 1/2 instead of milk.

Last night I needed to get dinner on the table quickly, used premade pie crusts to make simple hand pies with ground meat. Nice thing to have in fridge for sweet or savory applications.

I’m cooking Marry Me Chicken today.
Any opinions about putting some mushrooms in it?
I think I should microwave them first, so they don’t water the sauce down?

I usually sauté mushrooms to get rid of the extra water.

I made beef stew in the crockpot last night(and I did add mushrooms to that) . I wanted something that would provide leftovers for tonight since I am volunteering somewhere until 5.

Beer can chicken yesterday followed by chicken and noodles today with the leftover chicken.

Comfort food last night - about as simple as it gets.

French baguette sliced in half lengthwise. Topped with thin slices cheddar and Monterey Jack cheese - but plenty of it. Leftover ham from freezer slices thin and put between the cheeses . Close baguette, brush on butter on top, wrap in foil and toast in toaster oven for 25 minutes .

Campbell’s tomato soup made with milk (how we always ate it growing up) but diced cherry tomatoes and jalapeños and put in bottom of my soup bowl. Pour hot soup over it and sprinkle with parm.

Fancy but easy grilled cheese and tomato soup!

We had eggs, bacon, and a salad tonight. It was very comfortable!

The Marry Me chicken was good. Next time I will likely put more mushrooms. Served it over orzo pasta. Also had Caesar salad.

Tonight’s dinner was a blast to our early marriage last - like 35 years ago! Bisquicks Impossible Cheeseburger Pie!!

H used to love it. My kids would have gagged so I didn’t make it for years. Added more vegetables and spices than the original recipe that only calls for salt for seasoning! Really not that unhealthy- the whole recipe only uses 1/2 c Bisquick.

Served it with a bowl of these Flavor Bomb Cherry Tomatoes I’ve been enjoying from Costco!

I’ve made it only once many years ago. But I have had the recipe for it that I cut out of the newspaper on the side of my refrigerator for a long time now. Been meaning to make it again. Thanks for the idea. I’ve never made Impossible Taco Pie but want to try that sometime.

It’s fun sometimes to revisit some of the retro recipes or recipes from childhood. Once in awhile I’ll make something like Meat Pie Roma or Pork Chops and Baked Beans and it reminds me of my mother!

Had this tonight -yum! It looks very similar to the Marry Me Chicken. I used half and half instead of heavy cream and it was plenty thick. Tonight, I made it with chicken and served over cavatappi, but I’ve done it with salmon and it’s also delicious.

That sounds amazing. We usually only cook fish on the grill but may have to try this.
