Random question I’m hoping someone on this thread will know the answer to. I’m planning on making a double batch of tortilla soup.
Will the time required be the same in the slow cooker, or should I allow extra? (That’s assuming it all fits to begin with - which I also have to figure out).

If you’re using the recipe I think you are, :yum: nothing is really raw it in and it’s mainly everything getting hot and flavors melding. Maybe allow an extra hour to be safe, but I don’t think you’d need much more of your slow cooker heats as it should!

Thanks - yes, “your” recipe. I’m not sure why I didn’t get notice you posted this. I’ve decided to make a batch today and we’ll have it for dinner. Then I’ll make another for lunch tomorrow, and dump today’s leftovers in towards the end. I was a little worried my crock pot wouldn’t hold the double amount anyway, so this will work well.

Can you re-share said recipe? Is the beef stew one also yours?

This is the one I’ve shared before. You can add/adjust with ingredients as you like. Depending on who I’m serving it to, I often add a drained and rinsed can of black beans the last hour or so. And I often just purchase torilla strips or lightly crush some bagged tortilla chips instead of making the homemade ones.

Beef stew is not my recipe! That is one thing I truly don’t love - beef stew!

This is a pretty authentic recipe- however I skip the cream, sugar, mint (I use lots of dill- prob 2 large bunches) and skip the barberries because I don’t like them. I make mine in a large Pyrex dish and bake it instead of doing it over the stove.

This looks a little more fussy than necessary so here is another recipe. (Notice no mint, barberries, cream, or sugar.)

Wowser, made these last night and they SCREAM comfort food! H said he had to practice willpower to not finish up every last one.

The recipe makes 12 good sized meatballs. I could only eat two - 2 was delicious and plenty. You can half the recipe and just use one sheet of puff pastry (one sheet is perfect for 6 meatballs).

Those look great! I’d never heard of Tastemade but my son got me a Tastemade cookbook for Christmas and the recipes look great!

After 24 hours without power (heavy snow). H made this for dinner when power was back. It was excellent.

Darn… saw this too late, after my basmati rice (the only kind I have at the moment) was in the rice cooker. Needed a recipe for the boneless chicken thighs in the fridge. I’ll be making chicken piccata, since we have a lemon and capers.

My office brings in lunch a lot from Mendocino Farms. I really like this couscous salad, and I am normally not a fan of either couscous or yellow curry. But this is seriously tasty! Found the recipe online:

The dough looks a lot like pita bread. Could one sub that I’m in a time pinch?

It would be different. These cook up super thin and crispy on the bottom. The magic is really in the unique seasoning of the meat, though, so I’m sure it would still be delicious.

I got a Dutch oven for Christmas… Can’t believe I existed without one up till now!

Delicious and super comforting batch of beef stew tonight.

I love mine. I would actually like to get a smaller one sometime for when I’m doing smaller quantities- a full size one is quite large!
