Whatcha Cooking? - Comfort Food Edition

I have leftover jasmine rice so I will make kimchi fried rice (minus the spam- I’ll use shrimp). The butter with the kimchi really smoothes out the sharpness of the kimchi and has a nice level of heat.

I made pulled pork in the crockpot last weekend but took the easy way out. McCormick slow cooker packet that uses Stubbs BBQ spices. Very easy and tasty. I found a .99 a pound Smithfield pork shoulder on sale and it was very good . Put some coleslaw on the sandwiches, used King’s Hawaiian rolls.

I made pulled pork a few weeks ago. Did a rub of a mixture of garlic powder, paprika, chili powder, salt, pepper and I don’t know what else. Did a quick brown on both sides (though you wouldn’t have too) and then set it in the crockpot with about 2/3 a bottle of root beer. It was really good!

H likes no sauce, I like ALL the sauce. I just put mine on top of the pulled pork.

Any good, non-grill uses for London Broil?

Pot roast was pricey this week, and there was a good sale on london broil. Alas, hubby is a little under the weather and not up to grilling in the cold weather.

I’ve used London Broil for steak fajitas when I couldn’t find flank steak. Everyone loved the fajitas.

I did some old school comfort food tonight. Hot roast beef sandwiches, mashed potatoes, and green beans. Also, made a french onion soup casserole for the first time and we thought it was very good. I’m full!

Cold weather is here! I made chicken lentil soup. A big pot of borscht is next.

I made chana saag with basmati rice. I did not use the coconut milk; instead I used what the author said is in the original recipe- evaporated milk. I really enjoyed this. It prompted me to buy a bunch of other curries, such as vadouvan curry. Now I need to search for more recipes.

My DH made a delicious dish with butternut squash, shells, cream, leeks, garlic, ricotta, parm cheese, white wine and water. It was delicious.

This was so easy and fantastic tonight. Served with corn tortillas, onion, avocado, cilantro and lime wedges. The dried chilies are easy to come by if there is any small Mexican mart/grocer in your area or a supermarket with a large latin section.

My 18 y/o made dinner tonight because I had to work late and DH is out of town. She has helped me make dinner a few times but this was the first time she cooked dinner all on her own (she does bake a ton). She even had the table all set so we could eat as soon as I got home! She made this tortellini soup but with a few modifications (no sausage, used spinach and 1/2 and 1/2 instead of kale and heavy cream). She did a great job! It was delicious.

I made this for dinner tonight and have to say, DELICIOUS. I did add a pound of ground chicken because for my H, not a meal unless there is meat!

I did a couple other tweaks (sautéed the asparagus w/the ground chicken and then added cooked orzo, lemon sauce, topped with toasted panko and parm)

Would def make again!

Interesting. Makes me wonder about pickle juice. I aways throw it out when the pickles are gone, but perhaps it could be used in small amounts to flavor soup(?)

You gotta have protein! “We” need protein to build and maintain muscle. Smart hubby!

I’ve seen it used as a marinade for chicken but haven’t tried it. We make Cornell chicken often though, which uses vinegar, so I guess it’s the same idea.
