We’re still doing grilled pizza on Friday nights, but I’ve made several soups lately even though it’s not cold here. Our favorite is fire-roasted tomato bisque with sourdough croutons and half a toasted-cheese sandwich. Every time I make a new loaf, I cube anything left of the previous loaf and add it to a bag in the freezer for baking croutons when we need them.
The winter weather really makes me crave comfort foods, but I also need to lose the extra holiday pounds so what a dilemma! Ha! Therefore my comfort food lately has been leaning low carb. I also make lots of soups, stews, chilis this time of year. I typically cook enough to put some in the freezer for a quick and easy meal later.
What we’ve been eating:
- Slow roasted pork butt with paprika rub (light on the brown sugar, just enough to help form a nice bark)
- Chicken & broccoli cheesy casserole (courtesy of Hip2Keto)
- Instant Pot white chicken chili (courtesy of Natasha’s Kitchen)
I too have to watch the carbs with comfort food–I am saving that chicken and broccoli casserole recipe!
That casserole is a favorite here. My D loves it too, and she does not worry about carbs (oh to be young).
If you like white bean chicken chili, that recipe is also a favorite. I reduce or omit the beans and corn to make it lower carb. Sometimes I add in cauliflower rice to thicken and give more texture. A keto chicken chili recipe I like is Keto White Chicken Chili (Instant Pot and Slow Cooker) - Maebells. I haven’t made that one in a while but think I’ll plan to now.
I made this Brussels Sprouts Hash recipe for dinner last night. I used ghee instead of olive oil, omitted the sugar, and topped it with eggs and ranchero sauce. It hit the spot on a cold night.

we’ve been eating potato florentine soup I made a (too) big pot of, and now I’ve made roasted red pepper mac and cheese…it’s 20 degrees outside, snow expected soon, so I don’t mind running the oven all day

My husband has had a tough week, so I made chicken Tika Masala for dinner. I use from a jar sauce, but it’s very good.
I planned to have it with salad beforehand, but he vetoed the salad :(.
We had corn chowder! It was delicious and perfect for a chilly night. I’m going to make something like chicken soup on Saturday when it’s supposed to be bitter cold here!
I made a pork shoulder in the slow cooker a few days ago, and it is the gift that keeps on giving. Since the first meal, the kidlings have had it for leftovers and The Lovely And Talented is using the last of it to make her wonderful adobo rice tonight.
I have one chocolate chip panettone from Aldi left. I love making french toast with it, but I have plan ahead and buy a couple when they first arrive because they disappear from the store fast!! It is going to be snowy and icy on Sunday so it’s going to be a great pajama/breakfast for dinner day!
I did shredded pork (seasonings only, no sauce) last night and it was a hit! Leftovers AND froze
Some for a quick dinner next week. H likes his plain - I did mine open faced with sauerkraut,
Cheddar and a spicy Franks ranch sauce.
Tonight is chili with raw veggies and dip and I made banana cake which I will frost once it cools!
This is an inspiring thread. Just this week I used the instant pot three times for cassoulet (not really authentic), cabbage and sausage soup, and chicken corn chowder. Thanks, everyone! Now back to that infinite Wordle site someone posted yesterday…
I’m finally going to do the stew recipe tomorrow that @oldfort made. I’ll let you know how it turns out.
I agree! This is an inspiring thread. I’ve noticed several people in this thread and the New Years meal thread mention cabbage and sauerkraut, which I don’t serve often. Now I’m inspired to work that into some meals over the next few weeks.
@abasket Do you make your own sauerkraut or buy it pre-prepared?
ETA: @UnsentDementor I also love my instant pot (especially this time of year) and for two days now I’m addicted to that Wordle game. LOL
I bought my sauerkraut prepared - it was prepared locally so not like out of a can! It lasted well since I was the only one eating it.

I have chili in a new crockpot I am testing for my thrift store. It’s Smells great.
But get ready for a laugh. This is a digital crockpot and came with the directions….except…they were the wrong directions. This is a crockpot 6 qt connected slow cooker that uses Alexa. You can Google that! The directions were for a regular digital slow cooker. When I plugged it in, all I got was a wifi signal indicator and one button where I could select high, low, warm. Apparently this thing can be voice controlled using the Alexa Ap on your cell phone or an Alexa. So…I guess if I had downloaded the ap…I could have said “Alexa, cook my chili on low for 8 hours”…and it would have happened!
