Whatcha Cooking? - Comfort Food Edition

Off topic, but I always imagined you as a New Yorker through and through! I love the image of midwestern @oldfort!

It was the first place I landed when I came to this country. A lot of American food I like were acquired during that time. I still have very fond memories of Dairy Queen. But I am a New Yorker.

This lady’s chicken shawarma is awesome. I am going to try the beef version. It’s a little different with the marinade. We got a flat top grill to cook outside so we will do it there- sunny and 70 in CA!

DeeCee, Can we come to your place for dinner?

My thoughts exactly!

Made a big instant pot batch of charro beans, only I added in some ground beef. Minus cilantro as husband has the pesky taste aversion to it.

I’ve never heard of charro beans!

Here is the beef stew I made.

I used @Mabelsmom recipe.

@oldfort the stew looks delicious. How were the flavors? I think I have all the ingredients so I am going to make the stew later this week.

H’s favorite low carb comfort food is baby back ribs, slow cooked in the oven. The only problem is that the aroma drives him crazy after the first two hours. I’m making them for tonight’s supper and by an hour ago he couldn’t take it any longer so he went outside to clean the gutters and sweep the porches.

Tomorrow’s supper will be unstuffed cabbage. It’s just a big pot of shredded cabbage with typical cabbage roll fillings of onions, tomatoes, ground beef and the usual seasonings but no rice. H likes to top his bowl with some shredded cheddar, too.

I have tried other recipes before and this by far was the best. The key is to get the meat recommended by the recipe and be generous with seasoning. The meat really melted in my mouth.

Did you follow the recipe exactly or make some adjustments? It looks delicious, many stews the vegetables get mushy but yours look great!

The recipe said to put the meat in the oven for 2 hours first and then add potato and veggie for 1 hour. I liked celery, so I added that in the last 30 minutes. I pretty much followed the recipe.

I made this for the second time (it was suggested by someone on another thread). I didn’t have rice, so I doubled the red lentils. Very satisfying. Vegetarian Stuffed Pepper Soup (Stove Top and Slow Cooker)

I agree with oldfort, this was the best beef stew recipe I have made, and key is the type of beef and prep. Make sure not to steam, just sear. Wish I had thought of celery, I love it too. Not sure why ,my finished stew looked thicker, but same result ,melt in your mouth meat.
