Made some last night – great for cold weather (and I got a compliment from the wife about it)!
so, so cold today. Was going to use the ground turkey in my fridge to make some Greek-style meatballs, but I’m feeling the need for something with more of a “comfort” vibe. Thinking either meatloaf and mashed potatoes or chili.
I am on the hunt for a tried and true pumpkin turkey chili because I have a couple of cans of puréed pumpkin I need to use. If anyone has a recipe for that they love, please share. Obviously, there are many online, but I like hearing from someone who has actually made it. Yes, I can look at comments, but I “know” you all!
Maybe you could do that with your ground turkey?

Based on comments here and my low carb diet, I made the following modifications:
- No flour. I dipped the chicken in an egg wash then coated in crushed pork rinds. This made wonderfully crispy chicken.
- I used about 3/4 c of broth and heavy cream based on comments here that the sauce was too thin. (I added a bit more heavy cream once I saw the consistency as it cooked down.)
- I added a bit more parmesan cheese to help thicken the sauce.
- I used chopped fresh tomatoes rather than sun dried. (This was the modification that bummed me out.)
- I added fresh asparagus and the chopped tomatoes to cook in the sauce while it simmered down and thickened.
- Served over cauliflower rice but it would have been fine without that.

I pan-seared some “fried” chicken for my kid using crushed pork rinds and egg as the batter, and it turned out well (older kid said it still tasted good next day at room temp, too). Thanks to folks on this thread for suggestion. Wasn’t trying to avoid carbs…just wanted to use up some pork rinds. Didn’t need to add salt. It was not a long fry time since chicken was already cooked in instant pot, so no trouble with burning the batter.
Would the pork rind thing work in an air fryer?
I haven’t tried that yet…I don’t see why not. I would worry about burning if it’s in there for a long time (like to cook chicken pieces to safety if they are large) but my batter was pretty wet with the eggs so a few minutes would have been fine. On the frying pan it was just a minute on each side.
Yes. I tried it recently as a substitute for panko. It was great. There are a lot of recipes out there if you google “using crushed pork rinds in air fryer”.
ETA: I’ve had no issue with burning either in a skillet or in the air fryer, but I used with smaller chicken pieces (just cut down either breasts or thighs).
H is making fish chowder tonight. I’m using cod and haddock and H’s homemade fish stock. This is one of my favorite comfort foods in the winter. Also, when I went to pickup the fish at the local fish market, I got some Massachusetts Bay scallops. Will do something with them tomorrow. They’re only available from October to March. If you like scallops, these are amazing.
The vegetarians are on vacation so I’m using their absence to grill a steak for dinner. (It’s in the 70s here in SoCal.) Will have a baked potato (w/toppings) and spinach salad with hot bacon dressing as sides.
I had oven-barbequed chicken wings with sweet potato fries and a cucumber salad last night. So good.
I had planned to make chicken fried steak w/cream gravy and biscuits (one of my comfort foods) for dinner on Friday, but I just got a text that the twins (14 months old) are not enjoying the ski vacation so everyone will be home around 9 pm tonight. I guess instead of chicken fried steak, I’ll be making Grandma Pizza instead.
Pea soup in the works. Serving with a green salad and thanks to the other food thread I follow here i just tossed some sweet potatoes in the oven.
Expecting a big storm to arrive tonight and last all day tomorrow. My Saturday is definitely going to involve baking bread and making minestrone soup (and binge watching Ozark and working my way through the 500 page book I just started). The only thing that would make this better is if would have arrived on a work day

We are on the edge of the East Coast storm so only predicted to get a few inches. However, the back edge of the storm is leaving behind a big drop in temps and gusty winds so the weekend is supposed to be frigid.
Tonight we are having mussels in a white wine cream sauce with crusty bread to mop up the sauce.
I decided to be indulgent and while at the store getting mussels, decided on a whim to buy a box of salted caramel brownie mix for my teenager to make tomorrow and some ice cream to go along with it. Dinner tomorrow night is rigatoni with bolognese sauce and garlic bread.
We rarely eat bread, pasta or dessert so definitely blowing off the healthy eating for the weekend!
I made this last night when S and DIL were coming for dinner. No one is keto - I just chose it because I had all the ingredients on hand!
It was a big hit. Not calorie free. If people will eat it add LOTS of broccoli. I cut down on the cream cheese and cheese a bit. You could use rotisserie chicken shredded to make it even easier.
I served it with a big salad and fresh baked French loaf.
I shared this recipe upthread as it is one of our family favorites. I often do both broccoli and cauliflower. Another low carb modification is adding crushed pork rinds as a topping if you’re used to casseroles with panko or crushed crackers.
