Will going to school part time affect my chances of landing a job?

I am only attending school part time due to a mental health condition I have. I am probably going to end up spending a total of seven years on my bachelors degree. I am wondering if an employer will view taking only two classes per quarter negatively?

I went part-time also. People go part time for a variety of reasons and there’s absolutely nothing wrong with it. In fact, the biggest complaint employers have with hiring entry level workers is a lack of work experience. You don’t owe them an explanation. In fact, I never put my degree dates in job applications. I leave that part blank. I’ve never had anyone ask about it either.

No it won’t, you do you and you do what you have to do. The goal is to finish the degree successfully, even if it takes longer than average.
