Vandy’s interview is optional, and it doesn’t affect one’s admission greatly. It is mainly to help applicants to learn about the school from yet another angle. Although, a high mark from the alumnus interviewer may pursue the AO a bit.

Except the Blair, Vany's undergraduates can switch schools and majors (or adding additional majors/minors) very easily once admitted, so the school or AOs are not giving the applicants' intended majors a lot of weight, but rather they are picking the best (in their view) applicants to fill the whole freshman class, rather than particular undergraduate school (as other schools do)
IMO, I don’t think you need to worry about those two issues. I am wondering what made you to switch from EDII to RD at the last minute.
