As far as I can tell, the next possible testing date for SAT II tests is October 1. Georgia Tech considers them as part of their app, and EA to GT is 10/15.
Princeton recommends the test, and has an EA of 11/1.

Most test sittings before the deadline are accepted. Results take 7-9 weeks according to CB.

Georgia Tech has an October 15 application deadline but supporting materials such as test scores are accepted for EA if provided by Dec 1. Princeton is one of many colleges that accepts through the Nov test for its early program as long as it gets the scores before December, and thus the Oct test is fine absent a very lengthy scoring delay. Both of those have an internet account with CB and “delivery” of SAT scores is done by CB placing the scores into that account, which usually occurs within a few days after you order scores sent. If you identify either in your test application as a college to automatically receive scores upon release, they are delivered via the applicable internet account a day or two before the scores are released to you online.
You can send your October scores to these schools, most schools will accept them even if they arrive after the deadline.
