I started watching it, ironically I just threw out a preserved lemon that I had in the fridge this week.

I like to make them super thin, like a crepe, and then put a bit of cottage cheese and fresh raspberries inside.

That’s cool. But one thing, with the oil or butter added, isn’t that 3 ingredients?
My daughter makes those for my grandson, he loves them.
To me it would seem “2 ingredient” because oil for cooking is always in my pantry.
I’m thinking this could be a good use for some bananas in my freezer.
Hmm, going to a small potluck brunch on Sunday, I might try this without the pie crust since one friend is gluten free and I have most of the ingredients.
After all this egg talk I hard boiled the ones left in my fridge. Then I went to buy eggs today. I can’t believe how expensive they were. Even the store brand was $3.50 a dozen.
The guy next to me said “I’m just going to buy some chickens.”
I made those “two ingredient” banana egg pancakes this AM. Next time, I’ll have to figure a better way to make them not stick, maybe a newer, better non-stick pan. I used just enough oil to coat the pan and that almost worked perfectly.
I added some wheat germ, but I didn’t add seeds (chia, hemp, etc.) this time.
Overall, I thought they were pretty good, maybe a more like a sweet plain omlette than pancakes, but I liked them. I may try egg whites next time, since I’m not used to using two egg yolks.
OK, I did a much better job on those 2-ingredient banana egg (whites only) pancakes this morning with a different pan. I used more Pam too, no oil.
I’m a “whole food” unprocessed type person and this works perfectly for me. I’ll continue to have my scamble M-F, but this “recipe” can be my weekend thing. And then the scramble for lunch.
New use at our house for egg casserole… “stretcher” food for a big group dinner. In this case, it was used for buffet spread with pot roast dinner for TBD people.
If you are up for a challenge, try a souffle.
Popular flavors are cheese and chocolate. So you could have a cheese souffle for your entree, and a chocolate souffle for dessert. hehe
I did make a cheese souffle… once. It’s one of the most difficult things I’ve made. But it was yummy.
Soufflé’s are great but not so good for buffets .

Pretty sure I have that clipping as well as it on one of my mom’s recipe cards. It was a family favorite.

We just finished off our Kirkland bacon bits - it is on the list for our next Costco trip!
Last night we went out for Mexican, I ordered street tacos and they were delicious. Today I turned my leftovers into a delicious brunch by adding an easy over egg, avocado hot sauce and some sour cream. Pic was not really staged to be a great pic but the eating WAS great!!! Add an egg to so many leftovers and you can elevate your leftovers!!!
