1 SAT II, 2 SAT II, 3 SAT II--to many?

With the advent of the New SAT, many schools have nullified the necessity of having to take “3” SAT II’s–considering the old writing SAT II, in a sense, is included on the new SAT. Still, many schools are a bit tenacious, stalwart-like, resolute about keeping the “3” SAT II system. I’ve visited sites…blah blah blah…talked to friends…blah blah blah…and yet, I still dont know the quota. In reference to the schools subsequently listed, could somebody list the amount of SAT II’s? I also came across some sort of “hoop-lah” that when taking the ACT, certain schools negate the significance of SAT II’s all together. I’m in quandry, “huh-help” me.
