4 years science vs. 5?

I've been thinking about what classes I want to take next year, and so far I'm quite sure I'll take AP Lit & Comp, AP Calc, and AP Gov. I also plan to audition for choir and I'm pretty sure I'll get into the top one (I have a very good voice, but they could discriminate against me for not being in choir previously). I'll take French III or IV, depending on which teachers take each class. That leaves 2 open periods each trimester. My GC wants me to leave 1 open because of calc, and I want to take several 1-tri classes. If I take AP Env Sci, this will squeeze my schedule - I won't get in all the art classes I want, and there's no way I'll have an open period unless I'm not in choir or I don't take the electives. The open period isn't very important to me, and I think I can convince my GC to let me fill my schedule, at least for 2nd and 3rd trimesters.

I took physical science and biology when I was homeschooled, so I came in as a 10th grader with those credits and took chem honors last year (a junior class), and this year I'm in physics honors (a senior class). I plan to take the SAT II in physics (lots of self-study cause I have a rather incompetent teacher) ... I'm interested in APES, and don't know if it'll hurt my chances at Yale or Cornell if I opt out of science my senior year and have no AP science. If I got an 800 on the SAT II Physics, would that help? What do you think?
